I bought 1 lb of fabulous scallops at Costco’s Seafood Roadshow that comes once a month. Does anyone have an equally fabulous scallop recipe they recommend? Possibly pasta? TIA

I love scallops! I have this one that I’ve been wanting to try but haven’t had a chance yet. You could serve it with a side of angel hair pasta.

I’ve made this several times – easy and delicious – of course it helps to have a tarragon plant going nuts in your backyard:

I don’t have an actual recipe — I had this dish in a restaurant, and kind of made up my own version :)

Fettuccini with Scallops in Vodka Cream Sauce

*Note: I’m not experienced enough to make my sauce from scratch, so I used a bottle

    1. Cook pasta according to package.

    2. Heat sauce and add to cooked pasta.

    3. Season scallops with salt and pepper.

    4. Drizzle olive oil in a pan and sautee scallops (a couple minutes on each side)

*Another note: I added asparagus to the dish. Cooked it, cut it up, and mixed it in with the pasta. Also, the original restaurant dish had sun-dried tomatoes.

Sorry I don’t have pictures. But if you try it, let me know if you liked it! (and if you create your own sauce, feel free to share that too! hehe)
