Holy Guacamole!

It was 917am and I got an itch. No not that kind of itch. GROSS!

The craving itch.

After confirming with my food-knows-no-etiquette friend, Nikki, about the ramifications (if any) of eating guacamole for breakfast, I pitted a couple avocados, furiously chopped up some veggies and… don’t bother me. Eating.

INGREDIENTS

6 ripe avocados
3 limes, juiced
1 medium yellow onion, chopped
1 garlic clove, smashed then minced
2 serrano chiles, cut into rounds
1 big handful fresh cilantro with stems, about 1/2 cup, finely chopped
Extra-virgin olive oil
Kosher salt and freshly ground black pepper

INSTRUCTIONS

Halve and pit the avocados. With a tablespoon, scoop out the flesh into a mixing bowl. Mash the avocados using either a fork or potato masher, leaving them still a bit chunky. Add the remaining ingredients, and fold everything together. Drizzle with a little olive oil, adjust seasoning with salt and pepper and give it 1 final mix with a fork.


The players club

Lay a piece of plastic wrap tight on the surface of the guacamole so it doesn’t brown and refrigerate for at least 1 hour before serving. (So didn’t wait an hour…)

Yummy! My other guacamole recipe has tomatoes and doesn’t use olive oil but my husband is the tomato freak, not me, so this recipe suited me just fine. Will definitely make again!

    mmmmm guac. Dammit now I wish I got a T-B-GGGGGG for lunch instead. It wasn’t so bad when you were talking about guac, but now that I see it … damn you

    Did you know that if you put avocados in the fridge at the peak of ripeness, they’ll stay that way for a week or even longer? That’s my favorite tip of all time.

    RACHEL, Good tip! Thats what I do with my ripe ones. The ones that are underripe I put in a brown paper bag so that they ripened faster. I think you’re suppose to put an apple in the bag too b/c the apple gives off ethylene gas and helps it ripened. Just some nerd science for ya. HAHA.

    mmmm i luv guacamole… mine is just avocados, chopped onion, chopped tomatoes and lime juice and you wouldn’t believe how people absolutely rave about it… they are always like ‘whats in it?!?!’…and it’s the most BASIC of guac recipes. it’s in my blood. YUM!

    MARA, I think thats why I like guac. Simple ingredients, a little prep but GREAT snack (or breakfast in my sitch!) HAHA.

    I just made some guacamole, too! I love the stuff. And your cakester recipe . . . looks awesome, but dangerous. That makes a whole LOT of cookies!

    MADAMCHOW, I am totally a guac addict! yeah those cakesters make alot but you can cut the recipe in 1/2 easily so its not “as” much. Probably another reason why I don’t make them that often… too dangerous!

    I just knew this was going to be a winnerwith me, *giggles* my Mr. Picky “I don’t eat nothing no slicker than me!” turned his nose up at it. YES! Mine all mine I thought! (BEEP!) WRONG!

    I thought I was going to have it all to myself for lunch. When I went to snag a scoop of this yummy guacamole it was gone, I mean the container had less than a tablespoon left. *sniff*

    Mr. Picky said he decided to try a little bit of it *shaking my head* Guess he kept trying it and trying it huh? Ha ha!

    Off to make some more and this time I’m doubling the recipe. *snickers*
