Chicken Asparagus Pesto Pizza
T and I usually communicate during the day by email. I can almost time his email when the clock rolls around to 130pm that he’ll ask me whats for dinner? I made a couple suggestions but he immediately said PIZZA so being a good wifey that’s what I made. Since I am trying to be healthy these days I rolled out my dough pretty thin (no extra calories from doughy crust) and incorporated a veggie and protein. I wouldn’t say its the healthiest thing I could have made but it sure beats the greasy calories of Pizza Hut by far!

Makes 8 servings
Calories/serving = ~180 (www.sparkrecipes.com)
grilled chicken strips, cut into cubes
1/4 cup pesto sauce
1/2 bunch asparagus, chopped into 1″ pieces
homemade pizza dough
1-2 cups mozzarella cheese
Preheat oven to 400F. Roll out pizza dough.
Mix pesto sauce, asparagus and chicken together in a medium bowl. Add to pizza dough and top with mozzarella cheese.
Bake for 20-25 minutes.
Let cool for 5 minutes before serving.

He raved the whole time and said its his new favorite pizza – even more than the chicken potato! *gasp
