Easy Filet Mignon dinner for two

2 prepackaged filet mignon *I did say easy right? ;)*
various veggies (mushroom, bell peppers etc)
1 potato (1/2 potato/person)


> Preheat oven 400, bake filet mignon for 20 minutes
> Keeping filet on pan, add veggies to bake for another 10-15 minutes (depending on how well done you like)
> While filet/veggies are baking, put potato in microwave for 8-10 minutes (Poke holes in potato with fork before microwaving so air can escape)

** TIP: I like to pre-peel my potato before microwaving so I don’t struggle eating it later. Also prefer my asparagus steamed rather than roasted in oven, so I steamed the asparagus separate in Ziplock zipnsteam bag. Works great!
